Dondurma is a Turkish ice cream made by adding sugar, salep(살렙), and mastic(유향수지) to milk.
It is said to have started in 18th century by accidentally freezing salep, a tea drink during the Ottoman Empire.
Dondurma does not melt well at room temperature and is sticky, so it is sometimes cut with a knife and dipped in a fork.
You can taste desserts such as baklava, lokum, and cakes as well as dondurma here.

is a traditional dessert of the small, soft caramel type.
Lokum has a very long history dating back to around the 15th century.
Unlike today, the early rocum looked like it was fried with honey.
Later, around 1777, Ali Muhiddin Haci Bekir who opened a candy store in Istanbul, became the modern-day Lokum.
In addition to Lokum, he improved and made known to the world many Turkish dessert,
and later became a royal candy cook in recognition of his achievements.
Today Haci bekir is currently Turkey's most prestigious brand and the first Haci bekir store still operates today.
