Fire fuels the food at Soot -- a newly minted fine casual gastropub near Seoul’s Garosugil that had its soft opening earlier this month.
Grilled chicken, brined in buttermilk, is paired with a veloute sauce redolent of cumin, nutmeg and fenugreek seeds. Roasted pumpkin seeds add crunch to a dish that marries velvety, succulent and crispy textures with intense hits of salinity and spice.
Then there is Soot’s pork belly, which fuses a puffed, crackly exterior reminiscent of fried pork rinds with a silken, unctuous mouthfeel.

This restaurant is located across the street from the secret garden of Changdeok Palace.
This meal is pre-designed by the chef and can include up to 30 dishes. The food served here originated in royal palaces of ancient Korea. With the popularity of Korean soap operas, more people are being introduced to this type of meal. We noticed another room had a bunch of businessmen and some female accompaniment.
We were given a private room with a minimal amount of furniture, and the food just starting coming. The people there spoke very little English. We asked them about several dishes and got no correct response.

Located near Gyeongbokgung Station, the restaurant was also frequented by late President Roh Moo-hyun. It produces their ingredients like Tojongdak (Korean chicken), 4-years ginseng, chest nut, jujube, garlics, ginger, adlay, perilla seeds, pumpkin seeds, sunflower seed, nuts, pine nut, black sesame, and etc.
Even though one has to wait to enter during lunch time, do not worry about long wait as the restaurant is spacious. Besides Samgyetang (ginseng chicken soup), it serves Ogol-samgyetang, otdak, pajeon (green onion pancake), Rotisserie chicken, and other menus.
